Avarakkai / Broad Beans also known as field beans (Naatu kai). It is high in protein, starch, and dietary fiber. It has an excellent source of vitamin and minerals. In South Indian lunch menu, this vegetable is used at least once in a week as poriyal or in sambar.
Broad bean stir-fry is an easy recipe to prepare. Before preparation ensure to cut the edges of the broad bean and remove the string that is on both sides by using the knife. This Broad bean stir fry goes well with sambar, rasam and curd rice.
Ingredients
- 300 gms Broad Beans/Avarakkai
- 1 tsp Mustard,chana dal,urad dal all mixed 1 tsp
- 1/4 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 tbsp Coconut grated
- 1 strand Curry leaves
- 2 tbsp oil
- salt to taste

Instructions
- Wash Broad Beans thoroughly. Cut both the edges of the beans. Then using knife remove the strings along the sides and finely chop the Broad Beans as shown. Tender beans generally won't have the fibrous strings on the sides, it can be used just after slicing off the top and tail.
- In a Kadai, add oil and heat to medium flame. Add Mustard,chana dal,urad dal and curry leaves. Let it crackle. Then add Broad Beans and saute for 2-3 minutes. Now add turmeric powder, chilli powder and required salt.
- Mix it for few more minutes and add 1/4 cup of water, mix it thoroughly. Then close the lid and cook in medium flame for 10 minutes. Mix in between. At last add scraped coconut, mix well and serve.
Recipe Notes
- Add little water while cooking.
- You can also add sambar powder along with chilli powder to enhance the flavour.
- Instead of using kadai, you can pressure cook to one whistle after adding all the ingredients.
