A simple South Indian curry made with drumstick which is simple, healthy and delicious. Drumsticks are loaded with valuable minerals, healthy proteins and essential minerals making it a healthy food. A must-have ingredient in sambar, one can harness its health benefits in numerous ways such as cooking it with other vegetables, lentils (dals) or in the form of soup. It is high in nutrients and can be relished.
This easy Drumstick curry can be prepared in a jiffy as it is pressure cooked for one whistle only and made with available ingredients in the pantry. This can be had as an accompaniment with sambar, rasam or even with curd rice.
- 3 Drumsticks
- 1 Onion
- 1 Tomato
- 1 strand Curry leaves
- 1/2 tsp Mustard /kadugu
- 1/4 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 tsp Coriender powder
- 1 tsp Coconut grated
- 1 tbsp oil
- 1/4 cup Water
- salt to taste
- Finely chop onion and tomato. Wash drumsticks thoroughly and cut into 2-inch pieces. In a pressure cooker heat oil, add mustard seeds.
- Once mustard seeds crackle, add curry leaves and chopped onion and saute till golden brown. Now add tomato and saute till it is mushy. Then add turmeric, chilli powder, and coriander powder and saute for 2-3 minutes.
- Add drumstick, 1/4 cup water, and salt mix it thoroughly and pressure cook in medium flame for 1 whistle only and switch the flame off.
- After 2-3 minutes open the lid, don't leave it for a long time, it will become mushy. Again heat the cooker with the lid open, and add grated coconut, saute it till the gravy becomes thick.
- Add a quarter cup of water or even less.
- Pressure cook until one whistle only.
- After 2-3 minutes open the lid or else drumstick will become mushy.
- You can also garnish with coriander leaves.
- Using the same method you can make a drumstick- eggplant/brinjal combo.
A healthy and delicious drumstick curry is ready to be served with sambar, rasam or curd rice.
