A simple spicy chicken made with available ingredients in the pantry. As Eid is nearing I am delighted to post this recipe for chicken lovers. This can be made in a jiffy using pressure cook method. If removed in gravy consistency it can be had with idly, dosa, roti or rice. If dry roasted it can be had as an accompaniment with chicken kurma or rasam rice as well. This is two in one recipe. In our home, this yummy item is the most favorite and is relished in no time.
Why should always vegetarian dishes be bachelor’s recipe? This easy and simple fry can be made by anyone and it is hassle-free. It is simply delicious and anyone who doesn’t know how to cook can also make this dish easily with this given step by step description.
- 1/2 kg Chicken
- 1 Onion
- 1 Tomato
- 1 Green Chilli
- 1 strand Curry leaves
- 2 Cloves
- 1 inch Cinnamon stick
- 1/2 tsp Fennel seed/Sombu
- 1/2 tsp Whole Pepper
- 1 tbsp Ginger Garlic Paste
- 1/4 tsp Turmeric powder
- 1 tsp Chilli powder
- 1/2 tsp Garam Masala
- 1 tsp Coriender leaves finely chopped
- 2 tbsp oil
- 1/4 cup Water
- salt to taste
- Wash Chicken thoroughly with water infused with turmeric and salt and set aside. Finely chop onion and tomato. In a pressure cooker add oil and once heated add cloves, cinnamon, fennel, and peppercorns.
- Once it crackles add curry leaves, onion and saute till golden brown. Now add ginger garlic paste and saute till the raw smell goes. Then add tomato saute till tomato becomes mushy.
- Now add chicken and fry till it turns its colour to white as shown in the picture. Then add turmeric powder, garam masala, chilli powder and salt. Saute for 2-3 minutes, then add water and pressure cook for 2-3 whistles in medium flame and switch off the flame.
- After the pressure releases, transfer the chicken to a Kadai and fry in medium flame till it becomes dry and garnish with fresh coriander leaves.
- Use an equal amount of ginger and garlic to make the paste.
- Always add a little salt to onion and tomato as it helps to cook fast add remaining salt at the last.
- Use one bird chilli as it is very hot. If you are using Indian chilli add 3-4 green chillies.
- When you remove chicken in gravy consistency you can relish it with idly, dosa, roti and rice.
- It can be dry fried and relished  as an accompaniment with chicken kurma or rasam rice.
- The same method can be used to make easy mutton fry. For cooking mutton pressure cook up to 7-8 whistles.
A mouthwatering and delicious chicken fry is ready to relish.
