Brinjal Pepper Fry is a delicious and simple South Indian fry. This fry can be had as an accompaniment with Rice or Roti. It pairs well with Mor Kuzhambu, Sambar, Rasam, and Curd rice. It is very easy to prepare even by a novice. (updated with a new photo and video)
This fry gives excellent taste when tampered with sesame oil and sauteed with pepper powder. Always add pepper at the last to enhance the taste of the fry. Many don’t like brinjal. But if you prepare it in this method, sure everyone will love to have it. To make this fry, always choose the baby brinjal which doesn’t have seeds in it. - 250 gms Brinjal
- 1 Onion small
- 1/2 Tomato
- 1/4 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 tsp Coriander powder
- 1 tsp Pepper powder
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Garam Masala Powder
- 1 strand Curry leaves
- salt to taste
- 2 tbsp oil Sesame Oil
- 1/2 tsp Fennel seed/Sombu
- 1/2 tsp Mustard /kadugu
- Keep all the ingredients ready. Finely chop onion and tomato. Slit brinjal into 4 pieces and place it in water, as it would change its colour. Now heat a Kadai, add oil and bring it to medium heat. Then add mustard, fennel seed and let it crackle.
- Then add curry leaves and onion. Saute till onion turns translucent. Now add ginger garlic paste and saute till raw smell goes. Then add tomato and saute till it becomes mushy.
- Add turmeric powder, chilli powder, coriander powder, garam masala and saute for 2 minutes. Then add brinjal and dry roast for another 2 minutes.
- Now add 1/4 cup water, salt to taste, mix it, close the lid and cook till all the water is absorbed and brinjal is cooked well. Now add pepper powder and fry till it becomes dry. Brinjal pepper fry is ready.
- Use sesame oil to temper, it gives divine taste to the dish.
- Pepper must be added at the last, to get the peppery flavour.
- This can be had as an accompaniment with rice or roti.
- After cutting the brinjal, place it in a bowl of water, in order to avoid the change in colour.
