Egg Kurma is a spicy and finger licking delicious gravy, made with boiled eggs and coconut paste. This is also a lazy man Kurma for those who don’t want to make any separate side dish. Whenever I run out off vegetables, I directly get into making this kurma.
Egg Kurma can be made in different ways. Either you can use the boiled eggs or even you can directly drop the eggs while Kurma is boiling (you get a half boiled kind of egg in this method). This Kurma can be prepared in 15 to 20 minutes. With boiled eggs, we can prepare so many dishes. This kurma very well pairs with Rice, Roti, Chappati, Appam, Idiyappam, and parotta. Today we are going to see how to prepare this finger licking recipe.
- 4 Eggs
- 1 Onion
- 1 Tomato
- 1/4 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 tsp Coriander powder
- 1 tsp Egg curry power any good brand
- 1 tsp Ginger Garlic Paste
- 1 strand Curry leaves
- 1 tbsp Coriander leaves chopped
- 1/2 tsp Mustard /kadugu
- 1/2 tsp Fennel seed/Sombu
- salt to taste
- 2 tbsp oil
- 1/2 cup Coconut grated
- 1/2 tsp Fennel seed/Sombu
- 1 inch Cinnamon stick/Pattai
- 1 Clove
- Keep the ingredients ready. Finely chop onion and tomato. Grind the ingredients given under "To grind" using water to smooth paste and set aside.
- In a bowl, add 2 cups of water and boil eggs for 10-12 minutes. Let them cool or show them under running cool water and then peel the shell and set aside.
- Heat a Kadai, add oil and bring to medium flame. Now add mustard and fennel, let it crackle. Then add onion, curry leaves and saute till onion becomes translucent. Now add ginger garlic paste.
- Saute till the raw smell goes. Now add tomato and saute till it becomes mushy. Then add turmeric powder, chilli powder, coriander powder, egg curry powder and saute for a minute. Now add ground coconut, salt to taste and 2 cups water.
- Mix it thoroughly and cook the gravy for 8-10 minutes. Mix in between. Now gash the eggs and drop in the curry. Mix them and cook for 2 more minutes. Garnish with coriander leaves. Now egg curry is ready.
- You can either use boiled eggs or can directly add eggs at the end.
- Instead of eggs you can add vegetables and make it as vegetable kurma.
- Boil eggs for 10-12 minutes to get perfect boiled egg.
