Tomato Soup is one of the popular soups available in all Indian restaurants. This simple and delicious soup can be prepared at home with ease. This is my first post on soups in this blog. This hot bowl of soup is so comforting and satisfying to have in this cold climate.
Tomato soup is a soup made with tomatoes as the primary ingredient. It may be served hot or cold in a bowl and may be made in a variety of ways. It may be smooth in texture, and there are also recipes which include chunks (or small pieces) of tomato, cream and chicken/vegetable stock. Popular toppings for tomato soup include sour cream or croutons. It can be made fresh by blanching tomatoes, removing the skins, then blending into a puree. To get nice red color soup, use ripe juicy tomatoes. Today we are going to see the easy method using the microwave which is prepared within 20 minutes.
- Keep all ingredients ready. Finely chop onion, tomatoes and set aside.
- In a microwave safe bowl, add chopped onion, tomatoes, and ginger. Close the lid and cook in microwave at high for 8 minutes. Mix twice in between. Let it cool completely.
- Discard the ginger. In a blender add only cooked onion and tomato and blend it to smooth paste.
- Now strain the pureed tomato and discard the scrap. Add required salt and sugar. Adjust thickness of soup by adding a little water. Again cook in microwave high for 7 minutes and mix twice in between. Tomato Soup is ready. Add pepper powder, garnish with coriander leaves and relish.
- Use red juicy tomatoes to get the bright colored soup.
- I discarded ginger as my daughter does not like that flavor. You can even blend along onion and tomatoes.
- Use either black or white pepper powder.
- Can be even served with croutons.
You might also like Paruppu Rasam which can be had with rice or as soup.
