This Basic Sponge Cake is the best cake for the beginners to try. This is the base cake for any other cakes prepared. Here I have added Vanilla extract for this super soft sponge cake. If you master this basic cake, then it is easy to convert it to any other flavored cake.
Here in this recipe, I have used only the half portion of the specified ingredients. Once you prepared this cake you can top it with jam, or any flavored cream according to your needs. If you follow the ingredients and steps, sure you would get the soft spongy cake. I have already posted basic Vanilla Cup Cake. Both the method of preparation is different. But both the methods gives soft, spongy and fluffy cake. Now let us get into the recipe.

- 1 Cup All purpose flour/Maida
- 1 Cup Granulated Sugar
- 100 gms Butter unsalted
- 1/4 Cup Milk
- 2 Eggs
- 1 tsp Vanilla extract
- 1 tsp Baking powder
- Keep all the ingredients ready at room temperature. Pre-heat oven to 160 degrees C. Beat the eggs and Vanilla extract until fluffy using a hand blender. It should reach the ribbon consistency as shown. It takes at least 4-5 minutes to reach the ribbon consistency. In another bowl, whisk butter and sugar.
- Sift the all purpose flour and baking powder into the bowl containing mixed butter and sugar. Now mix it using a spatula.
- Now add the beaten eggs and gently fold it using spatula until all mixed thoroughly. At this stage, you feel it dry and hard to fold. Now add milk and mix it gently until all the ingredients are incorporated well.
- Grease the cake mold with butter first. Then sprinkle flour on it and spread it as shown. Dust out the remaining flour. Now pour the batter into the cake mold and pat it gently to spread evenly. Then bake the cake in the oven at 160 degrees C for 25-30 minutes or until when inserting a toothpick it should come out clean. Place it on a rack and let it cool for 15 minutes. Transfer to a plate. Cut to the desired shape and enjoy.

- While beating egg use hand blender to reach the fluffy ribbon consistency.
- Use a hand blender to beat only eggs.
- Remaining steps should be folded using a spatula or you can mix it in a circular motion in a single direction.
