Mutton Fry is another recipe from my mom’s kitchen. This mutton fry is very popular in South India, especially, in Salem. This simple and easy fry tastes deliciously awesome. You can have this fry as an accompaniment with Mutton Kurma, Chicken Biryani or any other Biryani and Pulao.
You can even have this as a starter. Some have it as a side dish along Dals. This yummy Mutton Fry is roasted along with the coconut paste flavored with mild spices like fennel seed, clove, and cinnamon. Main ingredients that flavor this dish is chili powder, pepper powder, and curry leaves. Curry leaves give a nice flavor to the dish. So don’t skip it. Spice can be adjusted according to your need. If you like hot, add 2 green chilies along with this. If you like peppery flavor add more pepper and reduce chili powder. We don’t make use of so many spices in this fry. This fry is very simple to prepare and very tasty to relish. Let us now see how to prepare this yummy fry.
- 300 gms Mutton
- 1/2 Onion
- 1/2 Tomato
- 1/4 tsp Turmeric powder
- 1 tsp Chili powder
- 1 tsp Pepper powder
- 1 tsp Ginger Garlic Paste
- 1 strand Curry leaves
- 1 tbsp Coriander leaves finely chopped
- salt to taste
- 2 tbsp Coconut scrapped
- 1 Clove/Lavangam
- 1 inch Cinnamon stick/Pattai
- 1/2 tsp Fennel seed/Sombu
- 1/2 tsp Fennel seed/Sombu
- 1/2 tsp Whole Pepper
- 2 tbsp oil
- Keep all the ingredients ready. Cut and wash the Mutton thoroughly. Finely chop onion and tomato. In a mixer, grind the ingredient to a smooth paste by adding water, listed in "To grind" and set aside. In a pan add Mutton, 1/2 tsp ginger garlic paste, 1/4 tsp turmeric powder and 1/2 glass water and pressure cook for 6 whistles.
- After pressure releases remove the lid transfer cooked mutton to another vessel and set aside. Heat a Kadai, add oil, once oil is heated add the ingredients one by one listed in "To temper". Let it crackle. Then add onion, curry leaves and saute till it becomes translucent.
- Then add ginger garlic paste and saute till raw smell goes. Add tomato and saute for few more minutes till it becomes mushy. Then add grounded coconut and saute for 2 minutes.
- Then add turmeric powder, chili powder, pepper powder and saute for few minutes. Then add cooked Mutton, close the lid and cook till all the water is reduced. Garnish with coriander leaves. Mutton Fry is ready.
- Use an equal amount of ginger and garlic to make the paste.
- Make sure you grind the coconut to a smooth paste.
- This same method can be followed for making Chicken fry, but ensure that it is pressure cooked for only 3-4 whistles instead.
