Baked Vegetable Samosa is made using readymade samosa sheets which are filled with mildly spiced cabbage, carrot, and peas. The healthy samosas can be had as an appetizer or a tea time snack. This stays crispy for a very long time.
These ready-made sheets give crispy and crunchy samosas. I have baked the samosas instead you can deep fry too. I have used limited veggies, you can add or remove veggies as per your requirements. Actually, we used to get this samosa in our school canteen, but it is deep fried. They don’t use potato in it. So tried the same type of filling. To make it healthy, instead of deep frying I have baked it. If you don’t want to use samosa sheets, you can make the dough at home using maida or whole wheat flour as we do it for Roti. Now let us see how to prepare this samosa.

- 12-15 Samosa Sheets ready made
- 1 Cup (heaped) Cabbage/Muttaikose shredded
- 1 Cup Carrot shredded
- 1/4 Cup Green Peas
- 1 Onion
- 1 Green chili
- 1 tsp Ginger Garlic Paste
- 1/4 tsp Turmeric powder
- 1 tsp Chili powder
- 1/2 tsp Garam Masala Powder
- 1 tbsp All purpose flour/Maida
- 1 tsp Jeera/seeragam
- 1 tbsp Coriander leaves
- 2 tbsp oil
- salt to taste
- Keep readymade samosa sheets at room temperature for an hour closed with a damp cloth. Preheat oven to 180 degrees C for 10 mins. Shred cabbage lengthwise. Grate carrot. Finely chop the onion and green chili. Heat a Kadai and add oil. Once oil gets heated add jeera and lets it crackle. Then add onion and green chili. Saute till onion turns translucent. Now add ginger garlic paste and saute for another minute. Then add carrot and cabbage. Saute for 3-4 minutes.
- Add turmeric powder, chili powder, and garam masala powder. Saute for another minute. Then add peas and required salt. Saute for another 3-4 minutes. Add coriander leaves, give a quick mix and set aside too cool. The filling for samosa is ready.
- Mix maida and water to make a thick paste and set aside which we will be using to seal the samosa sheet. Now take a sheet, place a tbsp of veg filling and fold it in a triangle shape as shown below. At end apply maida mix and seal the samosa sheet. Repeat this step for all samosas.
- Line a baking tray with aluminum foil. Arrange samosas as shown and apply oil on each samosa on both sides. Bake it at 180 degrees C for 10-12 minutes on each side or until golden brown. Baked Vegetable Samosa is ready.
- I have baked samosa, instead, you can deep fry it in the oil.
- You can even add cooked mashed potatoes and any other vegetables of your choice.
- Apply or spray oil/ghee/butter on both sides before placing samosa in the oven.
- Bake samosas for 10-12 minutes on one side and then flip the samosas and bake it for another 10-12 minutes or until golden brown.
