Rajma Sundal / Kidney Beans sundal is a tasty and healthy sundal. This sundal is almost prepared at the time of Navratri festival and also can be had as an evening snack. It is also the best accompaniment which goes well with variety rice like Tamarind Rice, Lemon Rice, Curd Rice, Mango Rice etc.
If you have ever been to an Indian restaurant and asked for the menu, one of the very first items on the menu will read “Rajma”, a very popular Indian dish. Rajma is actually red kidney beans and they are known for their great taste and nutritious benefits. The dried kidney beans are available throughout the year in prepackaged containers. Apart from great taste, it provides necessary proteins to the body and boosts the immunity of the system. Kidney beans are very rich in soluble fiber content which helps in controlling blood sugar levels, hence preventing diabetes.
For all sundal recipes, I generally use onions. If preparing for festivals or Navratri skip the onion and follow the rest of the steps specified. My daughter and hubby love this Sundal a lot. So I make this very often. To prepare this sundal you need to soak rajma at least for 8 hours or overnight. Using the same method we can prepare Bengal gram Sundal, Black beans sundal, chickpea sundal etc.
