Tiffin Sambar is one of the popular sambar prepared in all houses in South India for breakfast. This sambar can be had with any South Indian breakfast such as Idli, Dosa, Pongal, Vada and much more. This sambar is usually prepared using Toor Dal.
If you want to make simple sambar without any veggies, make onion sambar using small onions (sambar onions), but remaining steps are same. I have added a carrot for this sambar, you can even add brinjal, drumstick, sweet pumpkin and much more according to your taste. This sambar gives a nice aroma as we use freshly ground sambar powder. Once you prepare this sambar you will feel the aroma is spread over the entire house and feels divine. Whenever you serve, serve it with a tsp of ghee. Even kids would love to soak Idli in sambar and have. Let us see how to prepare this sambar.

- 1/2 Cup Toor dal/Thuvaram paruppu
- 1/4 tsp Turmeric powder
- 1/2 tsp oil
- 1 strand Curry leaves
- 1 pod garlic
- 1 cup Water
- 1 tbsp oil
- 1/2 tsp Mustard /kadugu
- 1/2 tsp Jeera/seeragam
- 1/2 tsp Fenugreek/Vendhayam
- 1 pinch Asafoetida/hing
- Keep all the ingredients ready. Soak tamarind in hot water for half an hour and extract the tamarind water and set aside. Pressure cook dal for 3 whistles using the ingredients given under "To cook Dal".
- Heat a Kadai, add ingredients one by one under "To make Sambar Powder" and dry roast and set aside. Let it cool. Once cooled, dry grind using a mixer.
- Now mash the cooked dal and add required water. Then add curry leaves, chopped onion, tomato, and carrot. Then add tamarind water, required salt and pressure cook for one more whistle.
- Once pressure releases open the lid. Then add 2 tablespoons of sambar powder to cooked dal. Mix it thoroughly. Now temper with the ingredients given under "To Temper". Garnish with coriander leaves. Tiffin Sambar is ready.
- Extra sambar powder can be stored in an airtight container and used later.
- You can even add more vegetables like brinjal, drumstick, pumpkin according to your taste.
- This sambar goes well with Idli, Dosa, Vada, Pongal and all South Indian tiffin items.
