Egg fried rice is one of the simplest and fast-moving Indo-Chinese menu in all roadside shops. This easy fried rice can be prepared at home with no extra effort. You can even prepare this with leftover rice. This dish can be prepared easily by bachelors and is best suitable for tiffin box.
Fried rice is usually stir-fried in a wok or a frying pan. It is mixed with other ingredients, such as eggs, vegetables, meat, and often served as a complete dish. It is a popular item of East and Southeast Asian cuisines. As a homemade dish, fried rice is typically made with leftover ingredients (including vegetables and/or meat) from other dishes, leading to countless variations. Let us now see how to prepare this egg fried rice.
- 2 Cups Cooked rice heaped
- 1 Onion
- 1/2 Carrot
- 2 Shallots
- 1/2 Capsicum
- 2-3 pods garlic
- 1 tsp Soya Sauce
- Pepper powder to taste
- salt to taste
- 2 tbsp oil
- Cook rice and cool it completely before use. You can use basmati rice or any other rice. After cooling the grains should be separate. Finely chop onion, capsicum, carrot, shallots, garlic and set aside. Heat a Kadai, add a tsp of oil. Once oil gets heated add eggs, salt to taste and scramble it and set aside.
- Now add 2 tbsp of oil in same Kadai. Add garlic and fry till raw smell goes. Then add onion, white shallot and saute on high for a minute. Then add carrot, capsicum, half of green shallot and saute for a while. Then add soya sauce and give a quick stir.
- Add the scrambled egg and mix it thoroughly. Then add cooked rice, salt, and pepper to taste and mix it on high heat thoroughly. Garnish with green spring onions. Egg fried rice is ready.
- Leftover rice can be used to make egg fried rice.
- If using freshly cooked rice, cool it completely. Grains should come separately after cooling.
- I used dark soy sauce, you can use light soy sauce as well.
- Instead of black pepper powder, you can make use of white pepper powder too.
