Mint Chutney / Pudina Chutney is one of the most flavorful and delicious chutney prepared for idli and dosa. While preparing this chutney whole house is spread with the aroma of mint. This goes well with roti too.
There are so many versions of making this mint chutney. It can be prepared with or without coconut. Also, it can be prepared with or without onion and tomato. This is my first recipe for chutney. Soon will be posting all the methods. Here I am using both onion and tomato as well coconut too. This is our regular chutney which is frequently made for idli and dosa. When this chutney is made, you don’t have to make separate sambar. You can also have this chutney along with snacks like Masala Vada, Baked Vegetable Samosa and much more. Now let us see how to prepare this chutney.
- 1 bunch Mint/Pudina Leaves
- 2 Onion
- 2 Tomato
- 1 pod garlic
- 4 Dry Red Chilli
- 1 Tamarind Small
- 2 tbsp Coconut grated
- 2 tbsp oil
- salt to taste
- 1 tsp oil
- 1 tsp Mustard /kadugu
- 1 pinch Asafoetida/hing
- 1 strand Curry leaves
- Peel mint/pudina leaves and thoroughly wash it in running water and drain it completely. Roughly chop onion, tomato and set aside. Heat a Kadai, add oil. Once oil gets heated add onion, dry red chili, tamarind, and garlic. Saute till onion turns golden brown. Then add tomato and saute till it becomes mushy.
- Now add mint leaves and saute for 2-3 minutes. Then add required salt, grated coconut and saute few more minutes and switch off the flame. Let it completely cool.
- Once cooled add prepared mint gravy in a mixer and make it a smooth paste. To season, add oil and heat it. Add ingredients under "To temper" and let it crackle. Then add the seasonings to the chutney. Mint chutney is ready.
- Using the same method you can prepare coriander chutney. Instead of mint add coriander leaves.
- Or else you can add half portion mint and half portion coriander and make mint-coriander chutney.
- This chutney goes well with hot idli and dosa. We even like to have it with roti.
