Rava Sweet Paniyaram is a South Indian snack which can be prepared very easily. The dish can also be made sweet or spicy depending on the preference of ingredients like jaggery or chilies respectively. Paniyaram is made in a special pan that comes with multiple small pits.
Four ingredients – rava, maida, sugar, and milk are used to prepare this snack. I used brown sugar instead of refined sugar. You can either use sugar, brown sugar or jaggery with the same measurement according to your needs. I have used basic ingredients, you can even add 1/4 cup grated coconut or coconut bits along with this batter. As we are using rava make sure to soak the batter at least for an hour. In the traditional method, we used to deep fry the batter in oil. Now paniyaram pan makes it easy for us to prepare with minimum oil. Let us now see how to prepare this Rava Sweet Paniyaram.

- 1/2 Cup Rava/Sooji/Samolina
- 1/2 Cup All purpose flour/Maida
- 1/2 Cup Brown Sugar sugar/jaggery
- 1/2 Cup Milk +1/2 cup extra
- 1 tsp Cardamom/Elachi powder
- 1/4 tsp Baking soda
- Ghee/Oil
- In a bowl add rava, maida, brown sugar, milk and mix it thoroughly. Save extra half cup milk for later use. Let the mixture rest for an hour.
- After an hour add cardamom powder, baking powder and mix the rested mixture. If the mixture is thick, add little by little milk and mix it to idli batter consistency. (You won't need all the milk).
- Heat the paniyaram pan and add ghee to each pit. Fill each pit with 3/4th batter. Cook on low flame.
- Once outer crust gets cooked, flip it to another side. Add ghee to this side too. Cook on both sides until paniyaram turns golden brown. Serve hot or cold.
- It is important to soak the batter at least for an hour.
- You can either add ghee or oil.
- I used brown sugar, you can also use regular sugar or jaggery of the same quantity.
- Make sure to mix the batter to idli batter consistency.
- You can even add 1/4 cup of grated coconut or finely chopped coconut to the batter.
- Cook on low flame till the center is cooked well.
