Coconut Rice is a very simple and easy variety rice which can be prepared by anyone. This is another staple food in South India. Every kid in Tamil Nadu will find this in his/her tiffin box almost on all weekdays. This rice is very tasty. All my North Indian friends like it. Whenever we used to have kitty party, I make sure to make this variety rice for them.
To make this dish yummy add a generous amount of grated coconut. Use only freshly grated coconut, which gives a great taste to this dish. You don’t get that exact taste from the ready-made coconut powder. To cook rice, soak basmati rice or long grain rice and cook in the ratio of 1:2 and set aside to cool completely. You can even use leftover steamed rice. But the rice should be separated after cooling. You can even use leftover rice for this dish. I just added Bengal gram, you can even add roasted peanut or cashews according to your taste and like. Now let us see how to prepare this Coconut Rice.

- 2 Cup Cooked rice
- 1 Cup Coconut grated heaped
- 2 Green chilies
- 1 strand Curry leaves
- 2 Clove/Lavangam
- 1 tbsp Bengal gram/kadalai paruppu
- 1 tsp Mustard /kadugu
- salt to taste
- 2 tbsp oil
- To cook rice, soak basmati rice or long grain rice and cook in the ratio of 1:2 and set aside to cool completely. You can even use leftover steamed rice.
- Heat a Kadai, add oil. Once oil gets heated add mustard seed, Bengal gram, cloves and let it crackle. Then add curry leaves, green chilies and saute for a minute.
- Then add grated coconut and a little salt and saute for 2-3 minutes. Coconut should fry well, but should not turn brown.
- Now add cooked and cooled rice required salt and mix it thoroughly. Close and keep it to soak at least for half an hour before enjoying it. The longer it soaks greater it tastes.
