Keerai Poriyal/Green Stir Fry is a very easy South Indian Greens stir fry. We make sure to have greens at least twice or thrice in our weekly meal. This is very simple to prepare and using the same method you can use any other greens you like.
I did not mention any keerai name. You can use any keerai like mulai keerai (Amaranth), arai keerai (Amaranthus tricolor), thandu keerai (Amaranth Spleen), murungai keerai (Drumstick leaves), siru keerai (Tropical Amaranth) etc. Preparation for all are same, except murungai keerai (drumstick leaves) should be cooked for more time. At least for 10 minutes. This leafy stir-fry can be had as an accompaniment with Sambar rice, Rasam rice or Curd rice. You can even mix with hot steamed rice with a tsp of sesame oil. Now let us see how to prepare this Keerai Poriyal/Green Stir Fry.
- 1/2 cup Toor dal/Thuvaram paruppu
- 1/4 tsp Turmeric powder
- 1 Garlic pod
- 1 strand Curry leaves
- 1 tsp oil
- 2 bunch Keerai/Greens any greens
- 1 Onion
- 1 tbsp Chili powder
- 1 tbsp Coconut grated
- salt to taste
- 1 tsp Thalikkum Vadagam or mustard seed
- 1 tsp oil
- 1 strand Curry leaves
- Wash greens thoroughly, remove the thick stem, finely chop leaves, tender stems and set aside. Pressure cook ingredients which are given under "To Cook Dal" along with half a cup of water for 2 whistles. Once pressure releases open the lid and set aside. The dal should be cooked well but should not be mushy, it should retain its shape as shown.
- Heat a Kadai and add oil. Once oil gets heated add vadagam or mustard seed and lets it splutter. Then add onion, curry leaves and saute till onion turns translucent.
- Then add keera/green and cook for 4-5 minutes. Then add cooked dal and saute for another minute.
- Then add chili powder and cook for another 5 minutes. At last garnish with grated coconut. Keerai poriyal is ready.
