Masala Dosa is one of the most popular breakfast/dinner recipe in all top notch restaurants or hotels. Crispy Dosa filled with mildly flavored potato, green chili, and spices. This restaurant style masala dosa can be made at home very easily.
For preparing dosa I have used of Soft Idli batter. You can follow the mentioned link to prepare the batter. The Same batter is used to make dosa, uthappam, paniyaram etc. With the same batter, you get soft spongy idlis as well as crispy dosas. Whenever we visit restaurants we used to order either this masala dosa or masala rava dosa. I am very happy to share you this recipe as we can prepare this at home with the same taste as a restaurant served dosa. This Masala Dosa can be accompanied with Tiffin Sambar, Coconut Chutney, Onion Tomato Chutney, and Mint Chutney. The Same masala can be used for poori. For, poori masala should be in gravy consistency, whereas for dosa it should be in thick consistency. Now let us see how to prepare this Dosa.

- 1 bowl Idli batter
- 3 Potatoes medium size
- 2 Onions
- 1 Tomato small size
- 1/4 tsp Turmeric powder
- 4-5 Green chilies
- 1 strand Curry leaves
- 1 inch Ginger
- 2 Garlic pods
- 1 tbsp Coriander leaves finely chopped
- 1 tsp Mustard /kadugu
- 2 tbsp oil
- salt to taste
- Keep all the ingredients ready. Pressure cook potato to 3 whistles. Peel the skin and roughly mash and set aside. Roughly chop onions or you can chop length wise. Finely chop tomato, ginger, and garlic. Heat a Kadai, add oil and bring to medium heat. Add mustard seed and let it crackle. Then add curry leaves, onion, ginger, and garlic. Saute till onion becomes translucent. Now add tomato and saute till it becomes mushy. Then add turmeric powder and give a quick stir.
- Now add a cup of water and bring it to a boil. Add mashed potato, required salt, mix it thoroughly and cook for 5 minutes or until all water is absorbed. Masala for Dosa should be thick in consistency. Garnish with coriander leaves. Masala is ready.
- Heat a pan and pour a ladle of batter and spread it in a circular motion as shown. Drizzle a spoon of oil/ghee. Let it cook on low flame till it turns crispy. Now spread prepared masala on dosa, fold it and transfer to a plate and relish.
- Boil potato to 2-3 whistles only.
- Roughly mash the potatoes using the hand. Don't make it to a fine paste.
- If you want spicier, add more green chilies.
- Don't skip chopped garlic and ginger. It gives a unique taste to the masala.
- Idli batter can be used to make dosa. Before making dosa bring batter to dosa batter consistency.
