To make a good jam, choose nice ripe juicy tomatoes. Four, apple size tomatoes while blended in mixer give 2 cups of puree. Even if you are not sure, it is always easy to remember the quantity. 2:1 is the measurement of puree and sugar. Remove chunks if any with a spatula. Do not filter the puree.
Stir continuously and scrape sides throughout the process. This stays for a month in the refrigerator. Again you can add or reduce ingredients according to your taste. If you don’t like cardamom flavor, add cinnamon powder instead. But I bet you this cardamom flavored jam is super tasty and is a big hit in our family. Now let us see how to prepare this Tomato Jam.
- Wash and cut 4 apple size ripe tomatoes. Add in a mixer and blend to a fine puree. After blending, if found any chunks remove it. No need to filter the puree.
- Heat a wok, add tomato puree. When it starts to boil add sugar and mix it thoroughly.
- At the first stage, you will see white foam. Cook the tomato and sugar in the medium flame till it reduces to half of the size. you need to keep on stir continuously scraping the sides. It takes some 10-15 minutes to reach this stage.
- After a while, the white foam disappears and tomato sugar puree turns glossy. At this stage add cardamom powder. Stir again continuously for another 10-15 mins till it forms a thick consistency as shown. When you scrape it from outside to in, it should not spread again. That is a perfect consistency. Switch off the flame, let it cool completely. Then transfer to an airtight container.
