Brinjal Sambar is a traditional South Indian Sambar Which is made of toor dal, brinjal, tamarind, and sambar powder. This Sambar is absolutely delicious and can be had as an accompaniment with any Indian Breakfast like idli, dosa, uthappam, paniyaram or can be had with steamed hot rice.
You can add drumstick along with brinjal or add drumstick instead of brinjal and make the sambar. Apart from brinjal and drumstick, you can add any veggies of your like. Most of the veggies used in sambar are beans, carrot, drumstick, brinjal, drumstick leaves, chow chow, radish, ladies finger and even raw mango is also used.

- 1/2 Cup Toor dal/Thuvaram paruppu
- 1/2 tsp Turmeric powder
- 1 strand Curry leaves
- 1 Garlic pod
- 1 tsp oil
- 1 tbsp oil
- 1/2 tsp Mustard /kadugu
- 1/2 tsp Cumin seeds/Jeera
- 1/4 tsp Fenugreek seed/vendayam
- 1/4 tsp Hing
- 1 strand Curry leaves
- 1 Dry Red Chili
- Pressure cook dal for 3 whistles with the ingredients given under "To cook dal" with a little water and set aside. Using Idli batter Pour idli using small idli molds. Finely chop onion, tomato and set aside. Also, cut each brinjal into 4 pieces and place it in water or else it will turn black in color. Soak tamarind in hot water and extract the juice and set aside.
- You can use sambar onion(small onions) instead of big onions.
- You can temper with ghee instead of oil. It gives a nice aroma to sambar.
- Add tamarind according to your taste.
- Sambar powder should always be added at the last and boil for 1-2 minutes only.
- You can also add drumstick along with brinjal to make sambar.
