Fried gram ladoo / pottukadalai urundai in Tamil is a popular South Indian sweet. This is one of the short and sweet recipes which can be prepared within 15 minutes. This is very healthy and protein packed sweets which are loved very much by the kids.
This Fied Gram Ladoo is made with just 2 ingredients – fried gram, jaggery. When you are craving for sweet, you can make this in few minutes and relish. My daughter is at home enjoying her vacation. She always wanted to munch something or the other. So made this on her request. The only thing that should be taken care while making this ladoo is the consistency of the jaggery syrup. Make sure it turns to the ball consistency or else you will not be able to make ladoos. Once done cool it completely and this can be stored in an air tight container for a month. We used to make this ladoo for almost all festivals and marriages. Now let us see how to prepare this recipe.

- 1 Cup Fried Gram/Pottukadalai
- 1/2 Cup Jaggery/Vellam
- 1/4 Cup Water
- 1 tbsp Ghee for greasing hands
- Dry roast fried gram for few minutes, so that it retains its crispiness. Transfer to a bowl. Now in the same pan add grated jaggery and water. Bring it to boil. Filter if any impurities present.
- Again boil jaggery water to rolling consistency. When you drop jaggery in water it should retain its shape and should not dissolve. You should be able to roll it like a ball. This is the proper consistency.
- Now add fried gram and mix well till jaggery and fried gram is mixed thoroughly. Switch off the flame.
- Let it cool for a minute. But while still hot, apply ghee on your hands, take a tbsp of fried gram mix and shape it to ladoo(urundai). If you are making in large batches, if the mix cools completely you will not be able to make ladoos. In this situation, slightly heat the mix, it will loosen and again start to make ladoos. Healthy fried gram ladoos are ready.
- You need to apply ghee or oil to your hand while making ladoos. Don't use water, it will stick to your hands will not be able to make ladoos.
- I made it simple, for extra flavor, you can add cardamom powder or ginger powder.
- Rolling ball consistency check is very important, or else your ladoos may turn sticky.
- Do roast fried gram before adding to the jaggery water mix.
- You can also make sesame seed ladoo or groundnut ladoo by replacing the fried gram.
