Kodo Millet Sev is another healthy evening snack from South India. Kodo Millet is also known as Varagu in Tamil. It has lots of vitamins, protein, fiber, and minerals. Also, it has high nutritional values which are very good for all age groups. It is a common practice in Tamil Nadu to use Millets in many forms.
It is also good to include all kinds of millets in the daily menu. It is difficult to feed kids with millet in the form of kichadi or any other breakfast items. But if we make it as snacks kids will also enjoy this millet. So keeping kids in mind I made this Kodo Millet Sev. It is exactly prepared like we make omapodi/plain sev but it includes Kodo millet too. This can be prepared very easily with in 30 mins. It is not possible to prepare sev with Kodo millet alone. It will not bind. So I made use of Bengal gram too. Now let us see how to prepare this Kodo Millet Sev.

Instead of Kodo Millet, you can make use of any other millets like Pearl millet, Finger millet, Proso millet, Barnyard millet or Foxtail millet.
- 1 Cup Kodo Millet flour Varagu maavu
- 1/2 Cup Bengal gram flour Kadalai maavu
- 1 tbsp Omam/Ajwain/Carom seed
- 1/4 tsp Asafoetida/hing
- salt to taste
- 2 Cup oil to deep fry
- First, soak carom seeds in hot water for 10 minutes. After it is soaked remove seeds and use only carom water. Sieve Kodo Millet flour and Bengal gram separately and transfer to a wide bowl. Add hing, salt to taste, carom water. Mix it thoroughly so that all the ingredients are mixed properly. Now add water little by little and mix it to roti dough consistency.
- The murukku press shown in the picture is used to make sev. Grease murukku press with oil and fill 3/4th with dough.
- Now heat the oil. If you put a pinch of batter it should raise immediately. Now adjust the flame to medium-low and slowly Press the murukku press in a circular motion. Do not overlap, just make two rounds. Now gently stir the sev until golden brown till the bubble stops and flip to the other side and stir it until golden brown. Repeat the process for the entire dough. Once done remove it and place it on a kitchen towel. Let it cool. As we made it in the shape of murukku, break it into small pieces. Store it in an airtight container.
- The dough should be soft like chapati dough but not too sticky.
- If you feel the dough is getting dry and not able to press, sprinkle little water and mix it thoroughly.
- Always keep the dough closed with a cloth or lid to prevent it from getting dry.
- You can even use one cup Kodo millet and one cup Bengal gram.
- If you are making in bulk always make it in batches.
- You can even use turmeric powder to enhance the color of sev.
- As I made this for kids, did not add chili powder. If you want it spicy then add some chili powder too.
