Bonda is an easy evening snack made of gram flour, which is almost found in all road side shops. This can be prepared in 10-15 mins. Apt for rainy days or as an evening snack which can be had with a hot cup of coffee/tea. Here I am going to show the simple and instant onion bonda.
Generally, bonda in shops would be in the proper round shape. But you can see in my pic it is not round in shape. The reason is I add less rice flour. As I have added less rice flour, bonda would be very crispy from outside, soft and airy inside. As it is crispier and soft you can have as many as you like. My hubby likes this way of making. If you want round shaped bonda, add extra rice flour to the batter. But you will be able to have one or two only. You will feel like it’s getting choked in your throat. Do not skip the ginger, it gives a nice taste to the bonda. Serve with coconut chutney or any sauce of your choice. Now let us see how to prepare this recipe.

- 1/2 cup Gram Flour/Kadalai maavu
- 2 tbsp Rice flour
- 1 Onion
- 1/2 inch Ginger
- 2 Green chilies
- 1/4 tsp Asafoetida/hing
- 1 pinch Baking soda
- 2 strand Curry leaves
- 1 tbsp Coriander leaves finely chopped
- salt to taste
- 2 Cups oil to deepfry
- Finely chop onion, green chilies, ginger, curry leaves and set aside. In a wide bowl add gram flour, rice flour, chopped onion, green chilies, ginger, curry leaves, coriander leaves, hing, salt to taste. Mix it thoroughly.
- Now add water little by little and mix to idli batter consistency. Heat oil in a kadai. Once oil gets heated drop batter gently using a spoon or using your hands. Do not over crowd.
- Cook on medium flame till both sides turn golden. Flip once in between.
- Once cooked well transfer to a kitchen towel. Serve hot immediately. Enjoy with a hot cup of coffee/tea.
- As I add less rice flour the bonda would not be in a round shape.
- If you add more rice flour you will get nice round shape as you get in shops. But that would not be crispy and airy as I do.
- If you add more rice flour it would turn hard.
- Keep the batter little thicker like idli batter consistency.
