Nei Appam is a South Indian sweet which is prepared mainly on Krishna Jayanthi or Karthigai Deepam. This sweet is prepared using rice and jaggery as the main ingredients. Nei appam is usually deep fried in ghee hence the name Nei Appam.
The traditional method of making Nei Appam is a lengthy and time-consuming process. You need to make flour from rice, make jaggery syrup, add to the batter and ferment it for 6-7 hours and then deep fry it in oil or ghee. Nowadays as all are looking for the easy and quick process, I have specified here a very easy and simple method. Soak rice in water, drain it, add all the ingredients specified to the mixer and grind to a fine paste to dosa batter consistency. Instead of deep frying the batter, pour the batter in the paniyaram pan, as it also consumes less oil/ghee. Once cooked on both side remove it from the pan and enjoy it hot or cold. Now let us see how to prepare this recipe.

- 1 Cup Raw Rice
- 1 Cup Jaggery
- 1 tbsp Coconut grated
- 1 tsp Cardamom/Elachi powder
- 1 pinch salt
- 1 pinch Baking soda
- Ghee
- Soak rice in water for one hour. Grate jaggery and set aside. After one hour, wash the rice thoroughly. In a mixer add rice, jaggery, cardamom powder, salt, coconut grated. Add a little water and grind to a smooth paste to dosa batter consistency. (If you find any impurities in jaggery, melt jaggery in 1/4 cup of water, filter and pour it into the mixer).
- Transfer ground batter to a wide bowl, add baking soda, mix well and set aside for 5 mins.
- Heat the paniyaram pan and add ghee to each pit. Fill each pit with 3/4th batter. Cook on low flame. Once outer crust gets cooked, flip it to another side. Add ghee to this side too. Cook on both sides until paniyaram turns golden brown. Serve hot or cold.
- Make sure to mix the batter to dosa batter consistency.
- If you feel the batter is in running consistency add little rice flour to it.
- You can even add 1/4 cup of grated coconut or finely chopped coconut to the batter.
- Cook on low flame till the center is cooked well.
- Some even add a ripe banana to the batter, to get soft appams.
