Pav Bhaji is a favorite Indian street food where hot, spicy, flavourful bhaji is served with crunchy onions lemon wedges and butter. Maharashtra claims to be the birthplace of this lovely dish.
Pav Bhaji is known as a snack recipe. But it is rich and heavy with all the butter and mixed vegetables. We usually have it for dinner. It is very filling. As this bhaji is made of mashed vegetables, even kids would love to have this. Butter also plays an important role for added flavor in the bhaji. So use either homemade butter or branded store bought one.

I did not use any artificial color, instead added a piece of beetroot while cooking to get the natural color. Pav makes this bhaji combo perfect. Always use the fresh pav. You can check here how to make homemade whole wheat pav buns or ladi pav. Pav should be lightly toasted with butter on tawa before serving. Now let us see how to prepare this yummy Pav Bhaji.
- 6 Pav Buns
- 2 big Potatoes
- 1 cup Cauliflower
- 1/2 cup Green Peas fresh or frozen
- 1/4 cup Beetroot
- 1/2 cup Green Capsicum
- 2 Onions
- 2 Tomatoes
- 1/2 tsp Turmeric powder
- 1 tsp Kashmiri Red Chili Powder
- 1/2 tsp Garam Masala Powder
- 1 tbsp Pav Bhaji Masala
- 1 tbsp Ginger Garlic Paste
- 1/2 tsp Cumin seeds/Jeera
- 1 tbsp Coriander leaves finely chopped
- salt to taste
- 3 tbsp Butter
- 1 Onion Finely chopped
- 1 Lemon cut to wedges
- 1 tbsp Coriander leaves finely chopped
- Roughly chop potatoes, cauliflower, and beetroot. Finely chop onion, capsicum, and tomatoes. In a pressure cooker add chopped potatoes, cauliflower, beetroot, peas, and tomatoes along with a cup of water. Pressure cook for 5-6 whistles. Once pressure releases mash it thoroughly and set aside.
- Heat a pan and add 2 tbsp butter. Once butter melts add cumin seeds. Let it splutter. Then add onion and capsicum. Saute till onion turns translucent. Then add ginger garlic paste and saute till raw smell goes.
- Now add turmeric powder, garam masala powder, Kashmiri red chili powder, and pav bhaji masala. Mix thoroughly. Add little salt close the lid and cook for 5 mins. Then mash the masala well.
- Now add mashed potato mix, required salt and mix well. If the gravy is very thick, add 1/4 cup water and simmer for 5 more mins. Then garnish with coriander leaves. Bhaji is ready. While serving lightly toast pav with butter on tawa and serve hot along with chopped onions and lemon wedges.
- Use a generous amount of butter to get the nice flavor.
- Do not skip cauliflower and capsicum.
- You can even add chopped carrots along with the veggies.
- If you don't like beetroot just skip it.
