Carrot Poriyal/Carrot Stir Fry is a simple and easy South Indian side dish. You can mix this carrot stir fry with rice and serve it as carrot rice for kids lunch box. As carrots have so many health benefits, this should be included in our daily meal in any form.
The Carrot Poriyal can be prepared with few ingredients that are available in your pantry. If you don’t want to include green chilies, skip it and add a tsp of sambar powder. Using sambar powder in stir-fry also gives a great taste to the dish. You can either grate the coconut or cut into small pieces. This goes well with simple dal, Onion Sambar rice, Rasam rice, curd or else you can directly mix to the steamed rice and can have it as carrot rice. Either way, it tastes delicious. Now let us see how to prepare this recipe.
- 300 gms Carrot
- 1 Onion
- 2 Green chilies
- 1 strand Curry leaves
- 1 tbsp Coconut grated
- salt to taste
- 1 tbsp oil
- 1 tsp Mustard,chana dal,urad dal
- Finely chop onion. Wash and grate the carrot. Heat a Kadai, add oil. Once oil gets heated add mustard seeds and let it crackle. Then add onion, curry leaves, green chilies and saute till onion turns translucent.
- Now add grated carrot and saute for 2-3 minutes. Then sprinkle little water, salt to taste, close the lid and cook for 10 minutes till carrot is cooked well and all the water is evaporated.
- Then add grated coconut and saute for another minute. Carrot stir fry is ready.
- Don't add too much water, just sprinkle little only.
- Either grate the carrot or chop it finely.
- You can even use shallots instead of onion.
