Badam Katli/Almond Burfi is one of the simple and rich recipes which can be prepared within 20 mins. No need to check for string consistency and this recipe takes only a tablespoon of ghee. This Badam Katli tends to be very soft and melts in the mouth.
To make this recipe either you can use whole almond or almond powder which is nowadays easily available in all departmental stores. As I said earlier there is no need to check for string consistency. Soak almonds in hot water for 15 mins. Remove the skin and grind along with milk to smooth paste. Add sugar and cardamom powder, cook till it leaves the sides of the kadai. Take a small piece and check whether you are able to make the ball. If you are able to make the ball then the consistency is reached.
Let the dough cool for a while. Transfer to a greased plate and roll it using the roller. Apply little ghee to roller too so that dough will not stick to the roller. Now let the dough cool completely. Then cut to the desired shape, garnish according to your needs and transfer to an airtight container. You can store this for a fortnight at room temperature and even for a month if refrigerated. Now let us see how to prepare this recipe.

- 1/2 Cup Almond/Badam + 3 almond to decorate
- 1/2 Cup Sugar
- 1/2 Cup Milk
- 1 tsp Cardamom/Elaichi Powder
- 2 tbsp Ghee
- Soak almond in hot water for 15 mins. Peel the skin and set aside.
- Grind peeled almond along with milk to smooth paste.
- Heat a kadai, add ghee and ground almond paste. Saute for a min. Add sugar and cardamom powder. Mix thoroughly and cook on medium flame for 5 mins. As added sugar, the mix starts to become watery.
- Cook for another 10-12 mins till the mix forms as a mass. Now it will not stick to the kadai. Switch off the flame and let it cool for a while. Now transfer the mix to the greased butter sheet and roll it to 1/2 an inch thickness. Cut to the desired shape and garnish with almond pieces. Badam Katli is ready.
- Instead of almond, you can use of almond powder too.
- You can even skip the milk and add water instead.
- Once the mix is cooked and gathers as mass, let it cool completely and then roll it.
- I did not add any color if you want you can add little saffron soaked in milk while cooking.
