Lemon Sevai is a delicious South Indian breakfast/dinner/evening snack recipe. If you have any leftover idiyappam you can make this sevai in no time. Not only lemon sevai you can also make other versions like sweet or savory versions using the leftover idiyappam.

Just defrost the prepared idiyappam and use it to make the desired sweet or savory. This Lemon Sevai is very simple to prepare and empties in no time. This is made similar to that of lemon rice only, where rice is replaced with idiyappam. Now let us see how to prepare this recipe.

- 2 Cups Sevai/Idiyappam/String Hoppers heaped
- 1 Onion
- 2 Green chilies
- 5 Cashews
- 1 strand Curry leaves
- 1/2 Lemon juice
- 1 tbsp Chana dal/kadalai paruppu
- 1 tsp Mustard /kadugu
- 1/4 tsp Turmeric powder
- 2 tbsp oil
- salt to taste
- Heat a kadai, add oil. Once oil gets heated add chana dal, mustard seed. Let it crackle. Then add cashews and fry till golden brown. Now add finely chopped green chilies and curry leaves. Saute for a min. Then add finely chopped onion, a little salt and fry till onion turns translucent.
- Then add turmeric powder and saute for a min. Add only little turmeric as mentioned. Lemon sevai should look in lemon color. Now add prepared Idiyappam by crumbling it.
- Add required salt and mix thoroughly. Then add lemon juice, mix it well and switch off the flame. After adding lemon juice don't cook for too much time, it will give a bitter taste. Now lemon sevai is ready. Serve hot.
- If you don't like onion you can skip it.
- Add lemon juice at last and immediately switch off the flame.
- You can even add a dry red chili while sauteeing for spicier sevai.
- You can even add peanuts in the place of cashews.
- At times even I add a tbsp of grated coconut and coriander leaves at last.
