Blueberry Muffins can be made easily even by the kids. This muffin turns to be very soft, fluffy and moist even without adding the butter. These muffins are made with fresh blueberry and taste awesome. You don’t need any fancy gadget to knead this dough. A simple spatula and whisk will do the job great.
To make this simple and yummy blueberry muffin, all you need is, mix the dry ingredients separately and mix the wet ingredients separately. Then combine both and mix to form a dough. This mixture does not resemble normal cake batter like flowy consistency. This is little thicker in consistency. You can even replace blueberry with any other berries of your choice.

These cute little muffins are loaded with fresh blueberries and this can be had as a snack or breakfast with a cup of tea. This also serves great treat for a lunch box. These muffins can be made year round either using the fresh blueberries or frozen ones. If using frozen ones do not defrost it. Use it as such. Now let us see how to prepare this recipe.
- 1.5 Cups All purpose flour/Maida
- 3/4 Cup Granulated Sugar
- 2 tsp Baking powder
- 1/2 tsp salt
- 1 Cup Blueberry fresh/frozen
- 1 Egg large
- 1/3 cup Vegetable oil
- 1.5 tsp Vanilla extract
- 1/3 cup Milk or Yogurt
- Preheat oven to 180°C. Wash and dry blueberries using a kitchen towel. If using frozen blueberries do not defrost it. In a large bowl whisk the egg. Then add vegetable oil, vanilla extract, milk.
- Whisk it thoroughly. I used raw sugar and ground to fine powder. In another large bowl add all-purpose flour, powdered sugar, baking powder, salt, and mix thoroughly. Then add blueberries and mix it gently.
- Now add the milk mixture to the bowl with the flour and mix it using a spatula gently.
- Line muffin tin with muffin cups. Fill the muffin cups with 3/4th of the batter. Gently pat the tin. Bake muffin 180°C for 12-15 mins or until done. If you insert a toothpick it should come out clean. Cool it on a wire rack. Blueberry muffins is ready.
- I used raw sugar, instead, you can use normal sugar.
- Instead of blueberry, you can make use of any berries of your choice.
- Also, I used milk for mixing the batter, you can even add yogurt to mix the ingredients.
- Fresh blueberries were used in this muffins. You can even use the frozen once. If using frozen ones do not defrost them.
- Vegetarians can replace the egg with applesauce or mashed banana of the same quantity.
