Palak Soup is very healthy and nutritious soup which can be relished in any climate. Now winter started and as I happened to see a fresh bunch of spinach couldn’t resist making this healthy soup. This soup turned out to be creamy, mild and luscious.
Palak is nothing but Spinach which is nutritious, green leafy vegetable. Eating spinach has been shown to benefit health in several ways, and it contains high amounts of all sorts of powerful nutrients. Spinach may decrease oxidative stress, improve eye health and help prevent heart disease and cancer. Without a doubt, spinach is an incredibly healthy food. It is good practice to include spinach in daily meal. Even kids will love this a lot. We can prepare so many recipes using this palak. It can be had as a soup, gravy for rice and roti, included in kebabs and much more. Now let us see how to prepare this recipe.

- 1 bunch Palak/Spinach
- 1 Cup Milk
- 1 tbsp Butter
- 1 tbsp All purpose flour/Maida
- 1/4 Onion
- 1 Garlic pod
- 1/2 tsp Sugar
- salt to taste
- Pepper powder to taste
- Water to adjust the consistency of soup
- In a bowl add water and bring it to boil. Add palak, onion, garlic and blanch it for 3-4 mins. Once done filter it using a filter.
- Now add filtered blanched spinach to a mixer and grind it to smooth paste.
- Heat a bowl and add butter. Once butter melts add all-purpose flour and saute until the color changes. Now add milk and bring it to boil.
- Then add spinach puree to the milk and add the required salt.
- Also, add the specified amount of sugar and boil until cooked well. Adjust consistency of the soup if required by adding water. Once cooked sprinkle pepper powder. Creamy and healthy palak soup is ready.
- Either use black pepper powder or white pepper powder.
- If you don't want the soup to be creamier, add less milk and more water.
- You can even add cream at last or garnish with cream.
