Ragi Sweet Paniyaram is a healthy and tasty recipe which can be had for breakfast, brunch, evening snack or dinner. Here I have shown the instant version of making paniyaram using ragi flour/finger millet flour. No need to grind or ferment.
I have made this healthier using palm jaggery instead of normal jaggery. If using normal jaggery boil it with water, filter it for any impurities and then use it. We have come across that ragi has so many health benefits. Ragi is known as finger millet in English and Nachini in North India. Main health benefits of Ragi are the for diabetes, weight control, proper cholesterol level and bone development. A good substitute for milk protein and excellent baby food. Boosts lactation for new mothers and keeps skin young and healthy.

You can prepare so many dishes using this finger millet. Sweet or savory dosa, idli, paniyaram, porridge and much more. It is good practice to include such food at least once or twice in a week. Now let us see how to prepare this simple and easy recipe.
- 1 Cup Ragi flour/Finger millet flour
- 3/4 Cup Palm Jaggery/Karupatti
- 1/2 Cup Coconut grated
- 1 pinch salt
- 1 tsp Cardamom/Elaichi Powder
- Ghee
- In a bowl add finger millet flour, powdered palm jaggery, coconut grated, salt and elaichi powder. Mix the ingredients thoroughly.
- Then add water little by little and mix to idli batter consistency. Let it rest for 15 mins. After 15 mins mix well.
- Heat the paniyaram pan and add ghee to each pit. Fill each pit with 3/4th batter. Cook on low flame. Once outer crust gets cooked, flip it to another side. Add ghee to this side too. Cook on both sides until paniyaram turns crispy. Serve hot or cold.
- I used palm jaggery, you can also use regular sugar or jaggery of the same quantity.
- Make sure to mix the batter to idli batter consistency.
- You can even add finely chopped coconut instead of grated coconut to the batter.
- You can also add chopped nuts too.
- Cook on low flame till the center is cooked well.
