Sweet Corn Veg Soup an easy Indo-Chinese soup which is loved by all can be prepared so easily at home within 15 mins. The beauty of the soup is it needs only limited ingredients and tastes awesome. You can add any veggies of your choice.
As winter started all we need is a hot cup of soup in the evenings. This is the perfect soup for winter which satisfies the hot cravings in the cold weather. To make sweet corn veg soup, I added basic vegetables like sweet corn, carrot, beans and spring onions. You can even add cabbage, broccoli or cauliflower or any other veggies of your choice. Also, I have added black pepper powder, you can even add white pepper powder as the original recipe calls for. It is up to your taste to increase or decrease any ingredients of your choice and it still tastes great. Now let us see how to prepare this recipe.

- 1 tbsp Butter
- 1 tbsp Carrot finely chopped
- 1 tbsp Beans finely chopped
- 1 tbsp Spring Onion finely chopped
- 1/4 cup Sweet Corn
- 1/4 cup Sweet Corn coarsely crushed
- 1 tsp Pepper powder black or white
- salt to taste
- Sugar to taste
- 2 tbsp Corn Flour
- 1 tbsp Spring Onion Greens to garnish
- Heat a bowl and add butter. Once butter melts add spring onion, carrot, beans, sweet corn and saute well on high flame. Then add 3 cups of water and bring to boil.
- Let the vegetables get cooked. Now add salt, sugar and pepper powder.
- Mix cornflour with little water and mix well without any lumps. Now add this slurry to boiling water. Cook for few mins and the soup starts to thicken. At this stage add coarsely crushed corn to the soup and boil for a min. Garnish with spring onion greens. Sweet Corn Veg Soup is ready.
- I added basic vegetables like sweet corn, carrot, beans and spring onions. You can even add cabbage, broccoli or cauliflower or any other veggies of your choice.
- Instead of black pepper powder add white pepper powder.
- You can even add a tsp of vinegar and green chili sauce if you like the soup spicier.
- Adjust salt, sugar, pepper powder according to your taste.
- Serve hot along with rusk or garlic bread.
