- 1/2 Cup Broken wheat/Godhumai rava
- 2 tbsp Moong dal/Paasi paruppu
- 3/4 Cup Jaggery/Vellam
- 5-6 Cashews
- 1 tsp Cardamom/Elachi powder
- 1 tbsp Ghee
- 3 cups Water
- 1 pinch salt
- Heat a pressure pan and add tbsp of ghee. Once ghee gets heated add cashews and roast until golden brown. Remove it to a plate and set aside. In the same pan add moong dal, roast until golden brown and a nice aroma comes. Then add broken wheat along with the moong dal and roast for 2-3 mins until a nice aroma comes.
- Then add 2 and 1/2 cups of boiling water, a pinch of salt and mix thoroughly. Pressure cook for 3 whistles or until cooked well. Once the pressure releases, open the lid and mash the cooked broken wheat.
- In another pan add jaggery and 1/2 cup of water and bring it to boil. Let the jaggery melt completely. No need to check for string consistency. Once the jaggery melts filter jaggery water into the pressure pan containing the mashed broken wheat. If required adjust water by adding more. Cook for 2-3 mins.
- After the Pongal gathers and becomes thick in consistency, add elaichi powder and roasted cashews. Mix thoroughly. Cracked wheat sweet Pongal is ready.
- You can even use milk. If using milk then half portion water and half portion milk can be used.
- After pressure cooking, if you find cooked wheat to be dry add little water or milk to mash the broken wheat.
- Use acchu vellam (urundai vellam) for the best result.
- Colour of Pongal may vary depending on the jaggery used.
- You can also add two tablespoons of grated or the bits of coconut fried in ghee to garnish additionally.
