Anchovies Fish Fry/Nethili Meen Varuval is one of the simple and easy fries from South India which can be prepared even by the novice. This fry requires only a few ingredients and tastes delicious. I have already posted Fish Fry using Kingfish.
Anchovies fish is also known as Nethili meen in Tamil. Today I’m using fresh fish to make this fry. You can even use the dry fish for the same fry. Method of making both are same and both tastes equally good. Once you marinate this fish let it rest for at least half an hour. So that all the ingredients get infused into the fish. You can even add half tsp of pepper powder along with the ingredients. This fry can be had as an accompaniment with Rasam, Kingfish Fish Curry or Anchovies Fish Curry. Now let us see how to prepare this recipe.

- 300 gms Anchovies/Nethili meen
- 1/4 tsp Turmeric powder
- 1 tsp Chili powder
- 1/2 tsp Ginger Garlic Paste
- 1 tbsp Rice flour
- salt to taste
- 1 Cup oil to deep fry
- Remove head and tail of anchovies and thoroughly wash it in water using salt and turmeric. In a wide bowl add anchovies. Add turmeric powder, chili powder, salt, rice flour, ginger garlic paste and mix it thoroughly. Let it marinate for at least half an hour.
- Heat oil in a Kadai. Once oil gets heated add anchovies one by one. Do not overcrowd. Cook on low flame on both sides around 7-8 min till the anchovies turn golden brown and crisp. Once done remove it on a kitchen towel and serve hot.
- Apart from Anchovies, you can use Kingfish, Pomfret or Sankara fish.
- After marinating, refrigerate it at least for half an hour.
- Once oil gets heated, bring it to medium-low flame and fry fish on both sides until golden brown.
Crispy and crunchy Anchovies Fish Fry is ready to relish.
