A Classic No-Bake Blueberry Cheesecake Shot is perfect for Valentine’s Day. A dense, creamy cheesecake with a blend of lemon juice, sweetened condensed milk and blueberry puree takes this recipe to next level.
Generally, the base of cheesecake recipe is made of biscuit, where the biscuit is crumbled, mixed with melted butter. Instead, in this recipe, I used fudge crumbs. Yes, you read it right. Actually, I was planning to share fudge recipe for this valentines day. I prepared everything well and placed in the oven, but forgot to remove it at right time and my fudge became like bread rusk. It tasted awesome and I didn’t want to waste it so crumbled it and used as a base for this recipe. But you can use any biscuit of your choice. These are great for parties and get together. Now let us see how to prepare this recipe.

- 8-10 Digetsive biscuits/graham crackers
- 2 tbsp Butter melted
- 1/2 Cup Blueberry puree
- 300 gms Cream Cheese
- 200 gms Sweetened Condensed milk `
- 1 tbsp Lemon juice
- 1 tsp Vanilla extract
- few Blueberries (optional)
- few Mint leaves (optional)
- Place biscuits in a mixer and pulse until it crumbles well. Mix crumbled biscuit with melted butter and set aside. Place cream cheese in mixer bowl and beat until smooth. Slowly add in sweetened condensed milk while beating and continue mixing until fully it gets incorporated.
- Continue beatings and add in blueberry puree, lemon juice, vanilla extract. Scrape down sides and beat again until all are combined and there are no lumps.
- Add 2-3 tbsp of butter mixed biscuit crumb in a glass and press it firmly. Then add the incorporated blueberry fillings at the top of biscuit crumb. Decorate with blueberry and mint leaves. Keep it refrigerated for 4-5 hours before serving. Now, no-bake blueberry cheesecake is ready.
- The specified amount of sweetened condensed milk was enough for me. If you have sweet tooth add more according to your taste.
- You can use any biscuit of your choice.
- But before serving, keep it refrigerated at least for 4-5 hours.
- Instead of blueberry, you can use any berry of your choice.
