Tomato Rice is a staple lunch box recipe from Tamil Nadu and it is my favorite recipe. This is very simple and easy to prepare and you can pack this for kids lunch box. This gets ready in 30 mins if you have any leftover steamed rice.
Whenever we go for outing or a long travel we used to pack this tomato rice along with other variety rice like lemon rice, tamarind rice. I have already posted how to make tomato biryani using pressure cook method. This tomato rice is easier version than the other one. You can prepare this either with freshly steamed rice or leftover steamed rice. Here I used freshly steamed rice. For the specified amount of ingredients, cook 3/4 cup rice soaked and pressure cooked for 3 whistles. Then cool the rice completely until all the grains are separated. Now let us see how to prepare this recipe.

- 3/4 Cup Par boiled rice/Pulungal arisi or raw rice
- 2.25 Cup Water
- 1 Onion medium size
- 3 Tomatoes medium size
- 2 Green chilies
- 1 tbsp Ginger Garlic Paste
- 1 Strand Curry leaves
- 1/2 tsp Mustard seeds
- 1 tsp Chana dal/kadalai paruppu
- 1/2 tsp Fennel seed/Sombu
- 1/4 tsp Turmeric powder
- salt to taste
- 2 tbsp oil
- Soak 3/4 cup of parboiled rice in water for 1 hr. Then wash it thoroughly and pressure cook for 3 whistles with 2 and 1/4 cup of water. Once pressure releases spread cooked rice on a plate and let it cool completely. Once cooled down separate it gently to grains.
- Chop onion lengthwise. Roughly chop the tomatoes. Heat a kadai, add oil. Once oil gets heated add mustard seed, chana dal, fennel seed and let it crackle. Then add curry leaves, slit green chilis and saute for a min. Then add onion and saute till it turns translucent. Then add ginger garlic paste.
- Saute for another min. Then add turmeric powder and saute for a min. Now add chopped tomatoes, salt to taste and mix all thoroughly. Close the lid and cook until tomatoes are mashed well and oil starts to separate. Mix in between twice.
- Now add cooked and cooled rice to the gravy, salt to taste and mix it thoroughly. Tomato rice is ready. Keep this mixed rice at least half an hour to one hour before serving. It gives a great taste to the dish.
- If you want tomato rice to be spicier add more green chilies or chili powder according to the taste.
- If you like masala flavored rice you can even add a tsp of garam masala powder while sauteeing.
- You can prepare this either with leftover rice or freshly cooked rice.
- I used two bird chilies as it is very hot. If you are using Indian chili you can add 4-5 chilis.
- Rice water proportion is 1:3.
