kuzhambu Chicken Fry one of the simple and easy fries made with leftover chicken from the kuzhambu/curry. Sometimes kids don’t like to eat chicken from curry and they want it to be fried. In such situations, you can go ahead and prepare this yummy fry.
I made curry using Chicken Kurma on purpose. You can use any leftover chicken from any curry. We need to use at least 2 onions so that it caramelizes and gives a great taste to the fry. Use dry red chili and pepper powder for the spice. If you want you can even add a ladle full of gravy while frying. But in this fry, I did not add any gravy. Also, I must say this recipe is from my hubby and he made this awesome fry. Now let us see how to prepare this recipe.

- 500 gms Chicken from chicken kuzhambu/curry
- 2 Onions
- 1 tbsp Ginger Garlic Paste
- 1 Dry Red Chili
- 2 strand Curry leaves
- 1 tsp Pepper powder
- salt to taste
- 1 tbsp oil
- Cut onion lengthwise, slit dry red chili into two and set aside. Heat a kadai add oil. Once oil gets heated add ginger garlic paste and saute until raw smell goes. Then add dry red chili, 1 strand curry leaves and saute for a min.
- Then add chopped onion, salt and saute till onion turns translucent. Strain chicken from kuzhambu/kurma and add to the onion. Give a quick mix.
- Add pepper powder, 1 strand curry leaves, sprinkle water little and mix all thoroughly. Then close the lid and cook on low flame for about 10-15 mins until chicken turns dark brown in color. In between mix twice or thrice. Kuzhambu chicken fry is ready. Serve hot.
- You can add chicken from any type of chicken gravy.
- If you like spicier add more dry red chili and pepper powder.
- Garnish with coriander leaves if you want.
