Kurkuri Bhindi is nothing but crispy ladysfinger/okra. The ladysfinger is coated with roasted Bengal gram flour along with other spices and either deep fried or can be baked in an oven with a tbsp of oil. This can be served as side dish for lunch or dinner.
This goes well with any rice or dal and I served this along with Peas Pulao. This recipe is very easy and simple to prepare. You can either deep fry in oil or bake it in the oven. Don’t forget to dry roast Bengal flour gram till a nice aroma comes. Roasting Bengal gram flour gives a nice flavor to this dish. Increase or decrease the spice according to your taste. Wash Ladysfinger and dry thoroughly. If it is not dried properly then it will be slimy while cutting it. Slit ladysfinger diagonally as thin as possible. Now let us see how to prepare this recipe.

- 250 gms Bhindi/okra/Ladysfinger
- 4 tbsp Bengal gram flour/Kadalai Maavu
- 1 tbsp Rice flour
- 1/2 tsp Garam Masala Powder
- 1/2 tsp Chaat Masala
- 1/2 tsp Mango powder
- 1 tsp Kashmiri Red Chili Powder
- salt to taste
- 1 tbsp oil
- Preheat oven to 160 degrees for 10 mins. Wash Ladysfinger and dry thoroughly. If it is not dried properly then it will be slimy while cutting it. Cut top and bottom of the ladysfinger. Then slit it diagonally into thin pieces as shown in the picture. You need to roast the Bengal gram flour until a nice aroma comes and then add all the ingredients and mix well thoroughly. I did not use any water to mix the ingredients.
- You can either deep fry ladysfinger in the oil or you can bake it in an oven as I did it here. Spread a parchment paper on a tray and place ladysfinger mix. Spead it as a single layer and place it in the oven. Bake it for 35 to 40 mins at 160 degrees C. Inbetween mix it and spread 2 to 3 times. Crispy ladysfinger fry is ready.
