Drumstick pulp Thokku is made with the pulp of drumstick and sauteed along with spices. Usually, we prepare either sambar or rasam using drumstick. But the pulp of drumstick can be used in any forms like we use in this thokku recipe or in cutlet or vada or soup.
This drumstick thokku goes well with rice or roti or you can even have it as an accompaniment with rasam rice or curd rice. I came across this recipe in Priya’s Versatile Recipe and her method was a little bit different from mine. You can check her recipe here. - 6 Drumsticks
- 2 Onions
- 2 Tomatoes
- 1/4 tsp Turmeric powder
- 1 tsp Chili powder
- 1 tsp Coriander powder
- 2 tsp Sambar powder
- 1 strand Curry leaves
- 1/2 tsp Mustard seeds
- 1/2 tsp Fennel seed/Sombu
- 1 tbsp Coconut grated
- 1 tbsp Coriander leaves finely chopped
- salt to taste
- 2 tbsp oil
- Finely chop onion, tomato and set aside. Cut drumstick to one-inch size. Pressure cook drumstick for 2 whistles with enough water and salt. Don't discard the water, we will use it later while cooking. Let the cooked drumstick cool it for a while and remove pulp using a spoon and set aside.
- Heat a pan and add oil. Once oil gets heated add mustard, fennel seeds and let it crackle. Then add onion, curry leaves and saute till onion turns translucent. Now add tomatoes.
- Saute till tomatoes turn mushy. Add turmeric powder, chili powder, coriander powder, sambar powder, and mix well. Then add little drumstick boiled water and cook till the oil separates.
- Now add drumstick pulp and adjust salt if required. Saute for 5 mins. Then add grated coconut, coriander leaves at last and give a quick mix. Drumstick pulp thokku is ready.
- Pressure cook drumsticks for 2 whistles only or else it will become mushy.
- If you don't like the flavor of fennel seeds add cumin seeds instead.
- You can even add a half tsp of sambar powder which gives a nice flavor to this dish.
