Dry Chili Chicken Fry is our family recipe. This calls for simple ingredients that are available in our pantry and there is no compromise in the taste. You can either make this fry using a kadai or make it easy by using a pressure cooker as I have shown here.
This is very simple and easy to prepare and apt for bachelors. Why only vegetarian recipes should be a bachelor recipe. Even non-veg can be prepared by a novice. This recipe uses minimum ingredients and can be prepared in no time. The only spice which we use here is dry red chili. So adjust it according to your taste. This spicy fry can be had as an accompaniment or as a snack or as a starter. Now let us see how to prepare this recipe.
- 1/2 kg Chicken
- 1 Onion
- 1 tbsp Ginger Garlic Paste
- 1/4 tsp Turmeric powder
- 7 Dry Red Chili
- 1 tsp Garam Masala Powder
- 1 strand Curry leaves
- 1/2 tsp Mustard seeds /kadugu
- 1/2 tsp Fennel seed/Sombu
- 10 Pepper Corns
- 2 tbsp oil
- 1 tbsp Coriander Leaves/Kothamalli
- Slit onion lengthwise. Wash chicken in turmeric salt water thoroughly and set aside. In a pressure cooker add oil. Once oil gets heated temper with mustard seeds, fennel seeds, and peppercorns. Then add curry leaves, dry red chili slit into two and saute for a min. Then add onion, a little salt.
- Saute till onion turns translucent. Then add ginger garlic paste and saute till raw smell goes. Then add garam masala powder and turmeric powder and saute for a min. Now add the chicken pieces and saute until the chicken pieces turn white. Add required salt, sprinkle little water close the lid and pressure cook for 2 whistles.
- Once pressure releases open the lid and transfer the cooked chicken in a kadai. Then roast it until all water is absorbed and turns crispy and dry. Garnish with coriander leaves and serve hot.
- Main spice used is dry red chili. Increase or decrease the quantity according to your taste.
- If you don't want to pressure cook the chicken, you can make this directly in the kadai.
- While pressure cooking, add only a little water as the chicken itself releases the water while cooking.
Simple and delicious Dry Chili Chicken Fry is ready to relish.
