- 1/4 cup Bengal gram flour/Kadalai Maavu/Besan
- 1 Onion slit lengthwise
- 1/4 tsp Turmeric powder
- 2 Green chilies slit into two
- 1 strand Curry leaves
- 1/2 tsp Ginger finely chopped
- 1/2 tsp garlic finely chopped
- 2 cups Water
- 1 tbsp oil
- 1 tsp Mustard seeds /kadugu
- salt to taste
- 1 tbsp Coriander Leaves/Kothamalli finely chopped
- In a bowl add Bengal gram flour, turmeric powder, salt to taste, 1 cup water and mix thoroughly without any lumps and set aside.
- Heat a pan and add oil. Once oil gets heated add mustard seeds and let it crackle. Now add onion, green chilies, curry leaves, ginger, garlic, a little salt and saute until onion turns translucent. Then add the Bengal gram flour mix water.
- Also, add one more cup of water and adjust salt if required. Immediately start to mix it while it starts to boil or else it will end up with lumps. Within 4 to 5 mins the chutney starts to thicken. When it reaches the required consistency switch off the flame and garnish with coriander leaves. Once the chutney stars to cool it thickens more. So keep the consistency accordingly. - Do not add ginger garlic paste. Add only finely chopped ginger and garlic as this gives a nice flavor to the chutney.
- Also, slit onion lengthwise. Restaurant style Bombay chutney has lengthwise slit onions.
- There is no need for tomato in this recipe.
- You can even mix 2 cups of water in the Bengal gram flour at the starting itself.
- Do not leave it unattempted. You need to continuously stir the Bengal gram flour mix while it starts to boil or else lumps may form.
