Simple and tasty South Indian style ladies finger fry/vendakkai poriyal/okra fry. Ladies finger fry is the best accompaniment which goes well with sambar, rasam or curd rice. Due to sliminess most of them don’t like ladies finger.
Follow these simple steps and you can cut the ladies finger without the sliminess. Wash ladies finger thoroughly in water and pat it dry with a kitchen cloth or else you can even keep it in the sun to dry for an hour. Apply oil to the knife and then start to cut the ladies finger so that it will not stick with each other. Chop finely as thin as possible. This recipe is so simple to prepare and uses only sambar powder as the spice. There is no onion, no garlic, and even no tomatoes. Now let us see how to prepare this crispy ladies finger fry.
- 1/2 kg Ladies Finger/Vendakkai finely chopped
- 2 tsp Sambar powder
- 1/2 tsp Turmeric powder
- salt to taste
- 2 tbsp oil
- 1 tsp Bengal gram/kadalai paruppu
- 1/2 tsp Mustard seeds /kadugu
- Heat a Kadai and add oil. Once oil gets heated add mustard seeds and Bengal gram. Let it crackle. Then add finely chopped ladies finger. Saute until the stickiness goes.
- Then add sambar powder, turmeric powder, salt to taste and saute until ladies finger is fried crispy. Ladies finger fry is ready.
- Wash ladies finger thoroughly in water and pat it dry with a kitchen cloth.
- Apply oil to the knife and then start to cut the ladies finger so that it will not stick with each other.
- Chop finely as thin as possible.
Delicious and crispy ladies finger fry is ready to relish.
