Drumstick Leaves Rice is a simple and easy recipe which is apt for tiffin box. If you are a regular visitor of my website you would have noted that I have so many recipes using Drumstick Leaves. Yes, drumstick leaves are my favorite and use it in almost all my recipes.
For making this rice either use sesame oil or ghee for tempering. This gives a nice taste to the dish. This rice can be prepared either with freshly made rice or leftover rice. Both tastes equally good. If you have cooked rice handy, this recipe can be made in 15 mins. Drumstick Leaves has so many health benefits, so it is good practice to include greens in our daily meal. - 2 cup Cooked rice
- 1 cup Drumstick leaves/Murungai keerai tightly packed
- 1 Onion finely chopped
- 1 strand Curry Leaves/Karuveppilai
- 3 Dry Red Chili split into two
- 1 tbsp Coconut grated
- salt to taste
- 2 tbsp oil Sesame oil
- 1 tsp Bengal gram/kadalai paruppu
- 1 tsp Mustard seeds /kadugu
- Finely chop onion. Clean and wash drumstick leaves. Heat a kadai and add oil. Once oil gets heated add Bengal gram, mustard seeds and let it crackle. Then add onion, curry leaves, dry red chili, a little salt and saute until onion turns translucent. Then and drumstick leaves, a little salt and saute until the leaves are half cooked.
- Then add a little water and mix it. Close the lid and cook until all the water is evaporated and drumstick leaves are cooked well. Then open the lid and add grated coconut and saute for another min.
- Then add cooked rice, adjust salt at this stage and mix the rice thoroughly without breaking the rice. Drumstick leaves rice is ready to relish. Serve hot.
- If you want to pack this to the kid's lunch box skip grated coconut as it may get spoilt.
- To make it more colorful you can also add a quarter tsp of turmeric powder while sauteeing onion.
- You can also add any fried nuts like cashew nuts or groundnuts sauteed in ghee.
- After adding grated coconut, you can stop the cooking here and use this as an accompaniment with rasam rice, sambar rice or curd rice.
