Drumstick Leaves Kootu is a typical South Indian style kootu which is prepared with moong dal and coconut paste. This kootu is very simple to prepare and tastes absolutely divine. Usually, this kootu is prepared using Amaranthus. As I had a drumstick Leaves I tried with this and it came out well.
This can be had as an accompaniment with any tangy gravies like Vendakkai Puzhi kuzhambu, poondu kulambu. This can also be mixed with hot steamed rice and relished. I have used moong dal, you can even replace it with chana dal or toor dal. Moong dal cooks very easily so no need to soak it. If you are using chana dal or toor dal, soak it for at least 3 hours before pressure cooking it. Again you can increase or decrease the flavors according to your needs. Now let us see how to prepare this kootu.

- Add water and grind to a smooth paste and set aside. Heat a kadai and add 2 tbsp oil. Once oil gets heated add onion and saute until onion turns translucent. Then add tomato and saute until it turns mushy. Now add cleaned and washed drumstick leaves and saute for a min. Add little water.
- Salt to taste and cook for 5 min until drumstick leaves are cooked well. Then add ground coconut paste and cook for another 5 mins. Then temper with the ingredients under "To Temper". Mix well and transfer to a bowl and serve hot with steamed rice.
- If you want spicier add extra green chili while grinding.
- Instead of adding extra chili you can even add a tbsp of sambar powder while adding the coconut for cooking. It gives a nice flavor to the kootu.
- You can even add chana dal or toor dal instead of moong dal. Each tastes differently.
