Grilled Avocado Sandwich is my new favorite. I usually make a smoothie with avocado and this time wanted to try something new. I am aware that guacamole made with avocado tastes awesome. So made guacamole and filled the sandwich with this and grilled.
The filling made with avocado was so creamy, buttery, and melt-in-mouth kind of texture. Seriously the filling was very addictive. This is very simple to prepare and takes just a few mins to prepare this healthy breakfast. This sandwich is certainly a big hit with kids. This sandwich can be had as a breakfast or as a snack with tea in the evening and well suit for kids tiffin box. I used milk bread if you want this to be healthier you can either use whole wheat bread or any other bread which doesn’t contain gluten. Now let us see how to prepare this recipe.

- 8 Bread slices
- 1 Avocado ripe
- 1/2 Onion finely chopped
- 1/2 Tomato finely chopped
- 1 Lemon juice
- 2 tbsp Coriander leaves finely chopped
- 1 tsp Pepper powder
- salt to taste
- Ghee/Butter to apply on sandwich
- Cut avocado into two slices, remove the pit and scoop the pulp with the help of a spoon and place it in a bowl. Mash it with a fork. Add lemon juice and mix well so that avocado doesn't get oxidized. Now add chopped onion, tomato (remove seeds and water, use only pulp), coriander leaves, salt, pepper and mix well.
- Place a slice of bread on the plate and on the bread spread a tbsp of the avocado mix as shown. Now place another slice of bread on top. Apply ghee or butter on both sides.
- Grill it on a griller until both sides turn golden brown. Cut sandwich according to your needs and serve hot.
- If your kids do not like the outer brown crust in bread, you can cut it and use only the white portion.
- You can even add chopped jalapenos to the avocado.
- You can also add yellow and red capsicum for a colorful display.
- You can even add garlic powder if you like the flavor.
