Today’s Veg Lunch Menu consists of tamarind rice, spiced curd rice, black beans fry, garlic pickle, masala vada, and pappad. You can even add any seasonal fruits that are available, salads, fresh fruit juices of your choice.
How to prepare this simple recipe within a one hour time:
- Soak black beans overnight.
- Soak rice, chana dal for vada in a separate bowl and at the same time pressure cook black beans and set aside.
- First, prepare the tamarind gravy and at the same time steam the rice. To cook rice, soak basmati rice or long grain rice and cook in the ratio of 1:2. or if you are using boiled rice (ponni rice) use 1:3 ratio. Then transfer cooked rice to two wide bowls equally, spread it and let it cool completely.
- Once steamed rice is ready and cooled, make tamarind rice and curd rice simultaneously.
- If you want to have tamarind rice in the afternoon at 1 prepare this early at 10 or 11 itself. As long as the tamarind rice soaks it tastes better.
- Then fry the black beans and papad side by side.
- Garlic pickle which I placed is homemade. You can serve any pickle of your choice.
