- Soak basmati rice in water for 15 mins. Finely chop onion and tomato. Then wash and drain it completely and set aside. Heat a pressure pan and add oil. Once the oil gets heated add bay leaves, cardamom, cinnamon stick, star anise, cloves and let it crackle. Then add mint, coriander leaves and saute for a min. Now add sliced onions and saute until the onion turns translucent. Then add ginger garlic paste and saute until raw smell goes.
- Now add tomatoes and saute until tomatoes turn mushy. Then add turmeric powder, chili powder, biryani masala powder and saute until raw smell goes. Then add curd and mix well.
- Now add paneer and mix well. Add 1 and a half cup of water, add required salt, mix well and bring it to boil.
- Once the water starts to boil add rice and ghee. Let the rice cook 3/4th and water reduce. Close the lid and pressure cook for 2 whistles on medium flame. Once done switch off the flame. Let the pressure releases completely. Then open the lid and gently fluff the rice without breaking the rice. Delicious paneer biryani is ready to relish. Serve along with any raitha of your choice.
- As peas go well with paneer, you can add a half a cup of peas while sauteeing.
- You can either use homemade paneer or frozen paneer. If you are using frozen paneer or peas defrost it before using in the recipe.
- You can replace yogurt with fresh coconut milk too.
- Add a generous amount of fresh mint leaves and coriander leaves.
- Serve biryani along with raitha or any gravy of your choice.
- Instead of basmati rice, you can even add seeraga samba rice.
