Today’s Veg Lunch Menu consists of Rice with ghee, daal (Nei Paruppu), drumstick leaves poriyal, drumstick leaves rasam, drumstick poriyal, tapioca chips, curd, and store-bought ginger pickle. You can even add any seasonal fruits that are available, salads, fresh fruit juices of your choice.
An easy way to cook all this in an hour is:
- When you buy drumstick leaves, clean it and remove the leaves from the stalk and store it in the refrigerator for later use.
- same way tapioca chips can be prepared in advance and stored in an airtight container for weeks.
- Soak rice in advance.
- First, make the drumstick leaves poriyal. You need to pressure cook daal, drumstick leaves, onion along with turmeric and water. Once done add one more cup of water to that and mix thoroughly. Separate a glass of water which can be used to make rasam.
- Now you can prepare the poriyal and rasam at a stretch.
- Next, you can prepare the drumstick poriyal and sideways pressure cook dal for making ghee daal.
- Temper dal and you are ready to dig in.
