Egg masala is a simple, and easy curry which can be even prepared by the novice. This curry is so delicious which can be served as a side dish or main dish. This egg masala is prepared using the simple ingredients available in the pantry.
Boiled eggs which are cooked in onion tomato gravy, with simple available ingredients take this recipe to the next level. You can increase or decrease the masala according to your needs. You can even add coconut milk at the end to get more gravy kind of curry. This simple egg masala can be served as a side dish for any biryani. Even this can be served with rasam rice, curd rice, roti or dosa.
How to boil eggs:
Add enough water in a bowl and bring it to boil. Now add washed eggs gently into the boiling water using a spatula. Cook eggs for 9-10 mins only. Once cooked transfer the eggs to a bowl of cold water along with ice cubes. Let it be there for a min or two. Now you can easily peel the skin. Our boiled egg is ready. - 3 Eggs boiled
- 2 Onions slit lengthwise
- 1 Tomato finely chopped
- 1 tsp Ginger Garlic Paste
- 1 strand Curry Leaves/Karuveppilai
- 1/4 tsp Turmeric powder
- 1/2 tsp Kashmiri Red Chili Powder
- 1/2 tsp Chili powder
- 1 tsp Coriander powder
- 1/2 tsp Garam Masala Powder
- 1 tbsp Coriander Leaves/Kothamalli
- salt to taste
- 1 tbsp oil
- 1/4 tsp Fennel seed/Sombu
- 10 Pepper Corns
- Heat a pan and add oil. Once the oil gets heated add fennel seed and peppercorns. Let it crackle.
- Now add onion, curry leaves and saute until onion turns translucent. Then add ginger garlic paste and saute until raw smell goes.
- Then add tomato and saute until tomato turns mushy. Then add turmeric powder, chili powder, coriander powder, garam masala powder, Kashmiri chili powder and saute for a min.
- Add a 1/4 cup of water, required salt and cook until raw smell goes.
- Make gashes on the eggs and place it in the gravy. Now mix all together and cook for another 5 more mins until the eggs are infused with the gravy. Finally, garnish with some coriander leaves.
- You can increase or decrease the masala according to your needs.
