Sambar Sadam is a combination of rice, lentil and mixed vegetables with the freshly ground masala. Usually, we make sambar and sadam(rice) separately, whereas in this we make both sambar and sadam as a one-pot meal.
This is one of the popular and traditional recipes of South India. Today we are going to prepare this recipe with freshly ground homemade masala as we get in the popular vegetarian hotels. Now let us see how to prepare this recipe.

- 1 tbsp Chana dal/kadalai paruppu
- 1 tbsp Coriander seeds
- 1 tsp Cumin seeds/Jeera
- 1/2 tsp Fenugreek seed/vendayam
- 4 Dry Red Chili
- 1 strand Curry Leaves/Karuveppilai
- 1 tsp oil
- 1/2 tsp Mustard,chana dal,urad dal
- 1/2 tsp Cumin seeds/Jeera
- 1/4 tsp Fenugreek seed/vendayam
- 1/2 tsp Asafoetida/hing
- 1 strand Curry leaves
- 1 tbsp oil
- 1/2 cup Par boiled rice/Pulungal arisi
- 1/3 cup Toor dal/Thuvaram paruppu
- 15 Sambar Onions/shallots
- 1 Tomato
- 1 Tamarind small lemon size
- 1 cup Mixed Vegetables carrot, beans, drumstick, brinjal
- 1/2 tsp Turmeric powder
- 1 tbsp Coriander Leaves/Kothamalli finely chopped
- 2 tbsp oil
- 1 tbsp Ghee
- salt to taste
- Soak rice for an hour. Wash toor dal. In a pressure cooker add rice, toor dal, 3 cups water, and pressure cook for 5 whistles and set aside.
- Soak tamarind in hot water for 10 mins and extract the juice and set aside.
- Roast the ingredients given under "To roast and grind" until it turns golden brown. Let it cool completely. Transfer it to a mixer, add little water and grind it to a smooth paste.
- In a pressure cooker add oil. Once the oil gets heated, add shallots and saute until shallots turn translucent. Then add tomato and saute until the tomato turns mushy. Now add vegetables and saute for a min. Then add tamarind water, ground masala paste, turmeric powder, 2 cups water, mix well and pressure cook the veggies for 1 whistle only.
- Now open the lid and add the cooked rice and dal into the pressure cooker and mix well. Cook until it reaches the semi-solid consistency. Once it cools it will thicken.
- Now temper it with the ingredients given under "To temper". Add some finely chopped coriander leaves. Drizzle a tbsp of ghee. Mix well thoroughly and serve hot.
- I have added basic vegetables like beans, carrot, drumstick, and brinjal. You can even add any veggies of your choice.
- You can also include peas, potato, etc.
- Cook until it reaches the semi-solid consistency. Once it cools it will thicken.
Hotel-style delicious sambar sadam is ready to relish.
