Simple South Indian style Potato Peas Fry which can be had as an accompaniment with rice or roti. Potatoes can be prepared in many different ways. This fry is made with simple ingredients and specially made with sambar powder.
You can either use fresh peas or frozen peas. If using frozen peas defrost it and then use in the recipe. You can even use dried peas. If using one soak it overnight, pressure cook and then use it in the recipe. Adjust the spice according to your taste. Do not skip the sambar powder. It gives a very nice flavor and taste to the dish. I have used homemade sambar powder. While sauteeing you can even add a slit green chili for more spice. Add a generous amount of oil. Now let us see how to prepare this recipe.

- 2 Potatoes boiled
- 1/4 cup Peas (fresh or frozen)
- 1 Onion
- 1/4 tsp Turmeric powder
- 1/2 tsp Chili powder
- 1/2 tsp Sambar powder
- 1 strand Curry Leaves/Karuveppilai
- 1 tbsp Coriander Leaves/Kothamalli finely chopped
- salt to taste
- 3 tbsp oil
- 1/2 tsp Mustard seeds /kadugu
- 1/2 tsp Chana dal/kadalai paruppu
- Boil potatoes and dice into cubes. I have used frozen peas. If using frozen peas defrost it and set aside.
- Heat a pan and add oil. Once the oil gets heated add mustard seeds, chana dal. Let it crackle.
- Now add onion, curry leaves, and a little salt. Saute until the onion turns translucent.
- Now add turmeric powder and saute well. Then add peas and cook for 5 mins.
- Then add diced potatoes, chili powder, sambar powder, adjust salt and mix well. If required sprinkle little water.
- Cook until the potato turns crispy or to the required consistency. Garnish with coriander leaves.

- While sauteeing you can even add a slit or finely chopped green chili.
